Italian Castelvetrano Olives
Our Castelvetrano olives come from the Belice Valley in Sicily, Italy where olive trees have been growing in the shade of the ancient Temples of Selinunte since the 5th Century BC.
Our modus operandi begins with the olive tree in which we manage and control the entire supply chain, from the tree to the shelf. Due to investments in technology, our factory has managed to obtain the right balance between the organoleptic qualities of the product and the right conservation requirements. This important work allows us to offer the end consumer a safe product that respects the natural characteristics of Sicilian olives. The Process 1. Handpicking the green olives 2. Washing and grading 3. Lye treatment to get rid of the bitterness 4. Washing and refrigerated storage until being packed in pasteurized jars |
